Air France transfer though Paris, AF was great to fly with
And, ~$150 or so/pp to fly from Paris to Madrid. So, a possibility to fly in to Paris first for a few days and fly to Madrid thereafter and the flight home.

I think with careful booking you'll find flights from Spain that get you to Paris ( or Amsterdam) in plenty of time for the afternoon flight to Canada. You'll get a better deal and you probably can check your baggage right through...which saves hassle in Paris.
Certainly the 07:30 flights from all the French provincial airports do that and I bet there will be a couple from Madrid, Barcelona, the other big cities and probably even Algeciras ( 'cos that is where the ferry from Morrocco lands).
In the event that you intend to cross an EU border once inside the EU you MUST get your passport stamped when you first enter the EU. I guess your only possibilities would be France/Spain or Spain/Portugal
FWIW TAP the Portuguese airline does a non-stop to Lisbon, which is then easy to drive to Mid- Spain
Another way if you intend to do Barcelona would be to do AF -> Paris and on to Perpignan. Then drive across the border to Barcelona and onwards. That way would not work too well if Madrid and south is the plan.
