Did a quick kijiji check in Ontario

Here's a 98 LS1 Trans Am convert, in budget, automatic. These things are still quick, even by today's standards, and unlike the newer Mustang options, you won't lose money on it as values on these have been on the upswing lately.

Mustangs really starting to pop up on Kijiji now, people must be getting stuff out of winter storage.  Mostly manuals, but a few automatics.  Of course pricing is all over the place....if a car is properly priced, need to really jump on it, it seems.

^I've never seen so many Mustang convertibles per capita as in Shippagan, NB and area , keep an eye open for stuff up there.

If you're buying a decade old VERT it's all about the top.  Look for garage stored units only.  Not to be confused with just winter storage.  Essentially you are looking for a one owner that has a year round garage,  They do exist.  The sun destroys the tops and nothing worse than a failing top.  Replacement costs are nuts.

I'm also considering getting an older, cheap convertible. Though I'm not too concerned about the top since I'll just use it for occasional joyrides.

Ugh, so we missed out on a couple of creampuffs early in convertible season, when there were movement restrictions within the province.  Didn't think much of it and kind of assumed similar cars would pop up, but now the market has dried up and it's absolute garbage on kijiji.  So we will wait on the sidelines and keep checking the listings everyday.

Just to update this thread, we are checking out a local 128 convertible next week that is owned by a business acquaintance.  He wants what I would consider to be top dollar for it, but it's a one owner car with full maintenance history and new tires, so I'm prepared to get a deal done if it's in as good condition as he claims.
